
Braised Onions with Balsamic and Rosemary
An easy side dish for many different occasions : the onions are caramelized and simmered with rosemary and balsamic vinegar. The day after their taste is even better when all the different flavors, tangy and sweet, are infused together. But you must be lucky enough to have any leftover…
Ingredients
- 5 big onions about 3 pounds
- 1 garlic cloves
- 2-3 stalks rosemary
- 40 gr brown sugar
- 240 ml balsamic vinegar
- 120 ml olive oil
- salt&pepper
Instructions
- Peel the onions and cut them in quarters. Heat the olive oil in a large sauce pan and sauté the garlic and the rosemary. Add the onions, sprinkle them with salt, pepper and the sugar. Stir until the sugar is melted. Add the vinegar and bring to boil. Reduce the heat, cover with a lid and cook until the onions are tender. Stir the onions occasionally. Serve them warm with a sprinkle of ground fresh pepper.
