Considered the king of Italian vegetable soups, minestrone is one of the most comforting and nourishing dishes you can bring to the table. There is no single universal recipe. The ingredients, the preparation, and even the way it is served change from one Italian region to another, and often from one family to the next. Here, I’m sharing the version I grew up eating at home.
I still remember my nanny preparing minestrone in the kitchen and patiently chopping every single vegetable into tiny pieces. Carrots, potatoes, celery, everything was cut almost the size of a bean. She did it slowly and with such care, and as a child I was always amazed by her patience.
Made with a slow-cooked soffritto, seasonal vegetables, hearty beans, and Parmigiano rind, this soup develops an incredible depth of flavor from the simplest ingredients. The process itself is humble: seasonal vegetables, legumes, and sometimes grains or pasta are slowly simmered together in water.
I love serving minestrone during the cooler months, when a warm bowl of soup feels especially comforting. But minestrone is truly a recipe for every season. In spring, I make it with fresh fava beans, peas, and zucchini. In summer, green beans and a spoonful of pesto bring freshness and fragrance. During autumn, pumpkin and leeks create a sweeter, richer version that feels perfect for colder evenings.
