During this class, I’ll share with you one of my favorite winter recipes. This bright, green and creamy soup is based on two vegetables chosen from cold weather crops: broccoli and potatoes. We’ll use stems and broccoli florets, so nothing is wasted, just like in the old peasant tradition. Broccoli stems are cooked with potatoes and then puréed to make a creamy base for the florets. The result is a soup with a silky texture and some vivid green crunchiness. An extra sprinkle of Parmigiano cheese, a handful of crumbled sausage, and you’ll have a quick, easy, and nutritious meal.
