Carciofi fritti are a crunchy, savory appetizer that appears on Italian tables from the end of January through mid-April, when artichokes are in season. This is the moment when their flavor is at its best, especially as part of a classic fritto misto.
Not far from us, in the coastal area of Venturina, grows Carciofo Violetto della Val di Cornia, a traditional Tuscan agricultural product cultivated in a unique microclimate. It’s small, tender with a nice color that goes from green to violet.
This is the same variety I grow in my garden, where just a couple of plants can produce a generous harvest over the season.
Artichokes are incredibly versatile, but frying them is one of the most loved and familiar ways to cook them in Italy. As a crunchy and savory appetizer, this is the simple, family-style version I grew up with: artichokes lightly coated in flour and egg, then fried until crisp and golden.
Served straight from the pan with a pinch of good salt, these carciofi fritti are crunchy on the outside and tender inside. Eat them with your fingers, one after the other, until the plate is empty.
