This is a recipe that always finds its way to my family table when some previously-cooked pasta is sitting in the fridge. The name of the dish in Italian is la frittata di pasta, and it’s a typical dish of Neapolitan cuisine as a way to use leftovers.

This pan-fried pasta is crunchy and tasty. We’ll mix cooked spaghetti noodles with eggs and cheese, some parsley, and bacon (optional), or you can always add your own favorite ingredients to create something new and delicious.
