Bordatino is a simple, rustic dish from the humble kitchens of Livorno, made with kale, beans, and their flavorful broth. In traditional peasant recipes, nothing was wasted—a handful of beans and their cooking liquid from the day before would often be transformed into the next day’s meal, creating this hearty winter dish.
To thicken the soup, we’ll use polenta, stirring continuously to achieve a creamy, velvety consistency. In this recipe, I’ll also show you how easy it is to cook dried beans from scratch, capturing all the rich flavors of their broth, just like in the traditional recipe.
