During the winter season, my family’s typical dinner every Thursday was ‘gattò di patate’. It’s a delicious savory potato cake that I will share with you during this class.
Gattò is a word borrowed by the French, as the origin of this recipe dates back to the 1700s when Naples was under French-Bourbon rule. The royals brought their chefs from France, which gave life to the ‘cucina dei monsu’, the cuisine of the monsieurs that influenced local recipes. One of the results of this cultural food exchange is the gateaux or gattò di patate.
Tasty and soft, gattò is a savory potato cake prepared with mashed potatoes and flavored with ham, salami, mozzarella, parmigiano cheese and breadcrumbs.
