This tomato carpaccio with melon, mint, and chili is a fresh and elegant twist on a traditional Italian summer salad. Thinly sliced ripe beefsteak tomatoes (Pomodori cuore di bue) are layered like a carpaccio and topped with a vibrant mixture of sweet melon, fresh mint, and a gentle touch of chili. Instead of being tossed, the ingredients are carefully layered so the juices naturally come together at the bottom of the dish, creating a light, fragrant dressing.
For this recipe, I used chili from my friend Rita at Peperita. She grows more than 20 varieties of organic chili peppers in the neighboring village of Bibbona.
It’s a dish I love serving in the height of summer, when tomatoes are at their peak and melon is at its sweetest. Simple, colorful, and naturally gluten-free, this is summer cooking at its most effortless and beautiful, best enjoyed outdoors with good crunchy bread and a long table.
Tomato Carpaccio with Melon, Mint and Chili

Ingredients
For the tomato base
- 500 g beefsteak tomatoes - (Pomodori cuore di bue)
- Salt - to taste
For the melon topping
- 400 g ripe melon - (cantaloupe or yellow melon)
- 60 g fresh onion - very thinly sliced
- 1 cup chickpeas - already cooked
- 10–15 fresh mint leaves
- A pinch of chili flakes
- 2 tbsp extra virgin olive oil
- 1 lemon - the juice
- Freshly ground black pepper - to taste
- 1 Handful black olives - pitted
Instructions
Prepare the tomatoes
- Wash and dry the tomatoes well. Cut them into very thin slices and arrange them in a large serving bowl or platter, slightly overlapping like a carpaccio. Season lightly with salt and let them rest for about 5 minutes. This step is essential, as it draws out their natural juices and creates the base of the dish.
Prepare the melon mixture
- Cut the melon into very small, bite-sized pieces and place them in a mixing bowl.
- Add the thinly sliced onion, the chickpeas, torn mint leaves, and chili flakes. Drizzle with extra virgin olive oil, lemon juice and season lightly with salt and black pepper. Gently mix until everything is evenly combined and fragrant.
Assemble the carpaccio
- Spoon the melon mixture evenly over the layer of tomatoes, spreading it gently without pressing down. The goal is to keep a light, airy structure.
- Finish with a final drizzle of extra virgin olive oil, a touch of freshly ground black pepper and scatter the black olives.
- Do not mix, the beauty of this dish is in its layers, and in how the flavors naturally come together while resting.
Let the flavors come together
- Leave the dish at room temperature for about 10 minutes before serving. During this time, the tomato juices will combine with the seasoned melon mixture, forming a delicate natural dressing at the bottom.
Serve
- Serve directly from the bowl or platter, making sure to include a bit of everything in each portion, tomatoes, melon mixture, and the juices at the bottom. Finish with an extra drizzle of olive oil if desired and serve with crusty bread.
