Melanzane a Barchetta – Stuffed Eggplant Boats Class
This recipe, very close to my heart, reminds me of when my nanny prepared stuffed eggplants for my family on summer evenings.
The name, melanzane a barchetta, refers to the eggplants being carved to resemble boats. These little boats are filled with plenty of tasty flavors including tomatoes, capers and herbs. Once baked, they can be a great side dish to serve with oozing mozzarella or a perfect antipasto to present at room temperature. You can’t miss it!
