Pasta and Pea Soup Class
Pasta e piselli is a recipe that I grew up with. It was part of our family’s winter repertoire. Made with a few simple ingredients and only one pot, it comes together quickly and easily.
Small pasta, typically tubetti, are cooked in a pea soup base, similar to a risotto. The starch of the pasta provides the creaminess without adding any cream, just a generous amount of grated cheese.
The sweetness of the peas and onion, sautéed with a salty pancetta, gives layers of flavor to this ultimate comfort food recipe. Adults and children will savor this pasta soup together, spoon after spoon.
