This simple recipe features spring’s star ingredient – asparagus. From early March to the end of May, asparagus grows wild in Tuscany. It’s so common to use them in pasta, risotto, or frittata. These edible shoots love to grow in ditches, among tree roots, and there’s even a friendly competition among locals to forage for this early spring treat.

In this recipe, we’ll use each part of the green spears in different ways—pureed, raw, and for the broth—to create a variety of textures and flavors.

I’ll share all my tricks to make a creamy risotto, from preparing the broth to choosing the best risotto rice and fresh asparagus. It’s one of my family’s favorite ways to enjoy asparagus in springtime and you don’t want to miss it.
