Gnudi – Spinach and Ricotta Gnocchi Class
I instantly fell in love with gnudi when I first moved to Tuscany. These soft and creamy dumplings (also known as gnocchi) are made with spinach and ricotta, a great pairing of Tuscan cuisine.
A traditional dish of peasant origin, gnudi in Italian means naked. They’re essentially a ravioli filling without the pasta shell, which is why they’re referred to as “undressed.”
In this class, I’ll share my tricks for making perfect, delicate gnudi. We’ll serve them in the traditional way, with butter and sage, to enhance their mild flavor. My personal touch is a bit of lemon zest.
