Pappardelle is a traditional pasta variety from the South-Central region of Tuscany. Usually paired with typical ragù di cinghiale (made with wild boar), this pasta is actually a great match with a wide range of sauces.
Very similar to fettuccine but with a broader shape, pappardelle is a hand-cut, wide, ribbon-like pasta.
In this class, we’ll make this unique pappardelle pasta starting from fresh, homemade pasta dough and rolling it out with a pasta machine. I’ll teach you my trick to leave a little bite to the pasta.
We’ll pair pappardelle with a creamy vegetarian sauce, creating a lighter dish for summer but still keeping that luxurious texture.
