December 5 Class: Homemade Fettuccine & Porcini Cheese Sauce

Join us for this class on: Saturday, December 5

10:30am PT / 1:30pm ET / 5:30pm GMT / 7:30pm Italy

Every day is good for fresh pasta! One of my best memories as a child is making fresh tagliatelle with my grandmother. I still have her pasta machine (which is more than 70 years old ) and I still make fresh pasta just the same way she did.

This class covers the basic recipe for fresh pasta, which we’ll use to make Fettuccine, paired with a delicious bell pepper sauce!

** We highly recommend having a pasta machine for this class. I will be demonstrating the recipe with a food processor and pasta machine with fettuccini attachment. If you do not have these tools on hand, we’ll provide video instructions before class to hand roll the dough and cut the noodles.

Key Ingredients

– eggs
– “00” and Semola Durum wheat flour
– Porcini mushrooms
– Parmigiano cheese
– Pecorino cheese
– milk
– butter

The full recipe and list of ingredients for each class are already published on each Class page, so you can start to prepare for future classes as soon as you enroll. You will also receive a shopping list by email about one week in advance.

When is the latest I can enroll in a class?

Enrollment will stay open until the last minute. However, for the best experience, we recommend enrolling at least 24 hours in advance – and even further in advance if you need extra time to shop for ingredients. Additionally, important instructions will be sent out the day before each class.

What if I miss a live cooking class or have to leave early?

Participants will have access to video recordings of any class they purchase. That way you can watch the replay (and cook) whenever is most convenient for you.

Cooking classes will be held through Zoom. This requires a quick and easy download, but you do not need a special Zoom account to participate (we’ll send all the instructions on how to use Zoom if you register for a class).

Class information and video replays will be hosted on this website. You will set up a password to access these special pages when you enroll for a class.

Important class communications will be sent out via email.

Can I make this recipe gluten-free / dairy-free / vegetarian / vegan?

Yes, it is possible to substitute ingredients, just know that your results may vary.
