Handmade testaroli pasta with fresh basil pesto class

Did you know you can make diamond pasta out of a crêpe? This is what we are making during this class, folks! It’s simple and unlike anything you have had before. 

I will share with you this special Italian pasta, testaroli with pesto sauce. It’s a very ancient recipe made by the Etruscans in the northern part of Tuscany. Testaroli pasta is traditionally prepared in a large cast iron pan called a testo, placed over a large wood fire.The way we do it doesn’t require any special equipment, ingredients, or skill, just water and flour and a pan! 

Following tradition, we’ll top it off with handmade pesto, a simple blessing of extra olive oil, a sprinkle of parmigiano cheese and a few fresh basil leaves.
