Prepare the tomatoes
Wash and dry the tomatoes well. Cut them into very thin slices and arrange them in a large serving bowl or platter, slightly overlapping like a carpaccio. Season lightly with salt and let them rest for about 5 minutes. This step is essential, as it draws out their natural juices and creates the base of the dish.
Prepare the melon mixture
Cut the melon into very small, bite-sized pieces and place them in a mixing bowl.
Add the thinly sliced onion, the chickpeas, torn mint leaves, and chili flakes. Drizzle with extra virgin olive oil, lemon juice and season lightly with salt and black pepper. Gently mix until everything is evenly combined and fragrant.
Assemble the carpaccio
Spoon the melon mixture evenly over the layer of tomatoes, spreading it gently without pressing down. The goal is to keep a light, airy structure.
Finish with a final drizzle of extra virgin olive oil, a touch of freshly ground black pepper and scatter the black olives.
