This grilled zucchini salad is a simple recipe but it looks and tastes amazing! It’s perfect for BBQ, picnic, a light dinner. You can also add different type of other veggies in the season such as asparagus (grilled), green beans (steamed) or raw vegetables like fennel. To garnish add toasted pine nuts, almonds or flowers that you have in your garden.

Ingredients
5zucchini
1handfulof fresh mint
1handfulof fresh basil
1lemon - zest and juice
1garlic clove
½cupextra virgin olive oil
salt & pepper
Instructions
Slice zucchinis thinly lengthwise.
In a grill-pan grill zucchinis for 4-5 minutes each sides or until they have grill marks. Meanwhile chop finely basil and mint. Add in a bowl extra virgin olive oil, lemon juice and zest, pressed garlic clove, the chopped herbs, salt and pepper.
Place zucchinis in a large plate and pour over the dressing.
Add the other vegetables of your choice, nuts and enjoy!
