That’s a great way to use zucchini if your garden is full of this delicious summer vegetable, especially when you have too many or forget to harvest them and they get too big. This happens very fast, leave them one night and you’ll get giant zucchini…Sometimes I think I want to spend the whole night with my zucchini to see them growing! There’s an infinite variety of stuffing and in this recipe we’ll use stale bread mixed with sausage. But feel free to skip the sausage and use more cheese or ricotta cheese with lots of herbs.
