CARAMELIZED WALNUTS

These caramelized walnuts are perfect paired with sheep’s milk cheeses, like Pecorino Toscano, or used to garnish salads. The sweet and spicy coating and crunchy taste of nuts are the perfect contrast to the softness of cheese. You can also drizzle some honey on top of the cheese and walnuts for extra sweetness.
Ingredients
100 gr / 4 oz walnuts
100 gr / 1/2 cup granulated sugar
Ground balk pepper
Directions
Heat a medium non-stick skillet over medium heat. Add the sugar, walnuts and a sprinkle of black pepper. When the sugar starts to melt, stir constantly until all the sugar is melted and well mixed with the walnuts.
Once the sugar is caramelized and nuts are coated, transfer them immediately to a plate or onto a cutting board. Separate the nuts right away. You may want to use a spoon if they are too hot. It is important to separate them while the sugar is still warm or they will turn into one big block once cooled!
