If you are looking for a healthy dessert, with a little butter and sugar, this is the recipe for you. It’s our favorite apple cake and I like to add some blue berries to have a tangy taste mixed with the sweet taste of the cake. Besides, their blue color matches the red and white of the apples just like the American flag !


3 apples, thinly sliced (skin on if soft)

100 gr / 1 cup blueberries

180 gr / 6 oz flour

100 gr / 4 oz sugar

2 eggs

50 g / 2 oz butter

80 ml / 1/3 cup milk

the zest of a lemon

1 tsp baking powder


Prepare the cake in a food processor or you can use a mixer.

Melt the butter in the milk.

Mix very well the eggs and the sugar in a food processor for about 3-4 minutes until pale yellow.

Add the flour, lemon zest, milk and butter. When everything is smooth add the baking powder and mix again. Slice the apples.

Put some parchment paper in a baking pan about 20-22 cm of diameter.

Pour the mixture in the baking pan and press the sliced apples to the bottom in a circular formation . Add the blueberries on top of the apples and push them in between the apples. Sprinkle some cane sugar and butter flakes on top.

Bake in a preheated oven for about 45 minutes at 180°C / 365°F until the cake feels quite firm (check with a knife) and the top is golden brown.
